Chicken Fry Ingredients:

How To Cook Chicken Fry?
Step 1. Slice the two fatter ‘cheeks’ of the mango from either side of the stone. Cut a criss-cross pattern across the flesh of each piece to divide into small cubes, then push the skin upwards and slice off the cubes. Set aside.
Step 2. Heat the oil in a wok or large skillet until hot. Add garlic, ginger, and chicken and stir fry. for 3 minutes. Add sugar snap peas, celery, and bell pepper and stir-fry for 3-4 minutes. Add the green onions, mangoes, and seasoning and then stir-fry for a further 2 minutes.
Step 3. In a small bowl, combine the lemon juice, white wine or apple juice, balsamic vinegar, and honey. Add to the wok and continue to cook for a further 2 minutes. Add the cilantro and Chicken Fry is ready to serve.

Beef Curry Recipe:
Beef Curry Ingredients.
1 Kg (2 lb) stewing beef.
1 Large onion, sliced.
4 Cloves Garlic, minced.
2 Tablespoons chopped ginger.
2 Red chili peppers, seeded and chopped finely.
3.5 Tablespoons hot curry powder.
2 Teaspoons turmeric.
1 Teaspoon black ground pepper.
1.5 teaspoons salt.
1/3 cup (80 ml 2 3/4 fl oz) vegetable oil.
1 Cup (250 ml, 8 fl oz) water.
4.5 Tablespoons fish sauce.
1 Tablespoon Sugar.
3 Large carrots, chopped.
3 Tablespoons cornstarch.
2.1/4 cups (560 ml, 18.5 fl oz) coconut milk.
Cilantro leaves to garnish.

How to cook Beef Curry?
Step 1. Cut the beef into cubes and place in a non-metallic container. Add onion, garlic, ginger, chili peppers, curry powder, turmeric, pepper, and 1 teaspoon of salt, mix and cover with plastic wrap to dry marinate for 12 hours or overnight. Turn occasionally.
Step 2. In a large, heavy-bottomed saucepan, heat oil on high, add beef, turning to seal all sides. Add the water, 1/2 teaspoon salt, and fish sauce. Bring to the boil, turn heat to low, cover and simmer for 1 hour. Add sugar and carrots and continue cooking for 15-20 minutes until meat is tender.
Step 3. Blend cornstarch with a little coconut milk, add to the rest of the coconut milk, and pour into the curry. Stir for 10-15 minutes until thickened. Transfer to a serving dish and garnish with cilantro leaves.

How to cook Beef with Black Bean Sauce?
Step 1. In a bowl, combine steak strips, garlic, chili (if using), soy sauce, and seasoning. In another bowl, mix the cornstarch with 1 tablespoon of water until smooth, then stir in vinegar.
Step 2. Heat the oil in a wok or large skillet until very hot. Add the meat and its marinade and stir-fry for 4 minutes, tossing continuously, until seared on all sides.
Step 3. Add bell pepper and stir-fry for 2 minutes. Stir in zucchini and sugar snap peas and cook for 3 minutes. Reduce the heat and add the cornstarch mixture and black bean sauce. Stir to mix thoroughly and cook for 2 minutes or until the meat and vegetables are cooked through. Scatter with green onions just before serving.
