Chicken Korma Ingredients:
3 Tablespoons vegetable oil.
1 Onion, chopped.
2 Cloves Garlic, minced.
3 Tablespoons mild korma curry powder.
750 g (1.5 lb) Chicken breast fillets, cut into 1-inch cubes.
350 ml (11.5 fl oz) Chicken stock.
25 g (1 oz) raisins.
1 Tablespoon garam masala.
Juice of 1/2 lemon.
4 Tablespoons sour cream.

How to Cook Chicken Korma Recipe
Step. 1. Heat the oil in a large bottomed saucepan, add the onion and garlic and cook gently for 5 minutes or until softened.
Step. 2. Into a bowl, place the flour and curry powder and mix together. Toss the chicken in the seasoned flour, coating well. Reserve the remaining flour. Add the chicken to the onion and garlic, then cook, stirring, for 3-4 minutes until lightly browned. Stir in the seasoned flour and cook for 1 minute.
Step 3. Add the stock and raisins and bring to the boil, stirring. Cover and simmer for 15 minutes. Add the cilantro and garam masala and cook for a further 5 minutes. Remove the pan from the heat and stir in the lemon juice and sour cream. Return to a low heat and warm through, taking care not to let the mixture boil.

Fragrant Duck Ingredients:
2 (about 175 g, 6 oz each) boneless duck breasts, skinned and cut into strips.
1 Teaspoon five-spices powder.
2 Tablespoons soy sauce.
2 Tablespoons rice wine or dry sherry.
1 Teaspoon sugar.
1 Tablespoon peanut oil.
1 Red bell pepper, deseeded and cut into thin strips.
2 Inch piece fresh ginger, cut into matchsticks.
2 Green onions, white and green parts separated, thinly shredded.
175 g (6 oz) fresh pineapple, cut into bite-sized pieces, plus juice salt.
How To Cook Fragrant Duck with Pineapple
Step. 1. Place the duck, five-spice powder, soy sauce, rice wine or sherry and sugar in a shallow non-metallic dish. Cover and marinate for 20 minutes.
Step. 2. Remove the duck from the marinade and reserve the marinade. Heat oil in a wok. Stir-fry duck over a high heat for 2 minutes. Add bell pepper, ginger and white part of onions and stir-fry for a further 3-3 minutes until bell pepper starts to soften.
Step. 3. Add pineapple and juice to the wok. Add marinade and stir-fry for 1-2 minutes. Season with salt if necessary. Serve straight away, sprinkled with the green part of the onions. Serve with plain boiled noodles.
